Stay & Taste the Wild at the Fairmont

Part of any getaway is dedicated to exploring the culinary offerings of a destination and Fairmont Hotels in the Pacific Northwest has created a menu to whet the appetite of both food lovers and travel aficionados. Working with select partners, visitors can connect with a smorgasbord of experiences that range from meeting local purveyors to sophisticated gourmet dining. Whether it's a first time visit or a return to a favourite locale, guests can stay at a Fairmont Hotel in Vancouver, Victoria and/or Whistler and use it as a gateway to explore the area's nature, beauty, and bountiful ingredients.

Armchair travellers can enjoy the Stay & Taste Package which includes a daily $50 food and beverage credit for the hotel's restaurants, bars or in-room dining. Participating hotels include Fairmont Empress in the capital of Victoria, Fairmont Chateau Whistler, and in Vancouver - Fairmont Hotel Vancouver, Fairmont Pacific Rim, Fairmont Waterfront and Fairmont Vancouver Airport.

For a tasty hands on experience, the World Class Wild program offers an a la carte menu suited to interests that range from foraging with a chef, zipping and sipping in the mountains, cider and spirit tasting, and a personal bee tour in organic gardens.

The Fairmont Vancouver Airport, rated #1 Airport hotel in North America by Skytrax, is an ideal base before embarking to the Yukon with Air North for the splendor of the northern lights, the midnight sun and regional delicacies. The ultimate high-flying package, Clouds to Canapés includes overnight accommodation for two in the luxurious Jade Suite with a four-course in-suite dining experience and wine pairings. Breakfast in Fairmont Gold, access to post security Plaza Premium Lounge, and concierge service including YVR Airport Butler are also included. Foodies can explore Richmond's renowned Asian cuisine on a self-directed Dumpling Trail, and in autumn, the fields become a sea of red with Canada's largest cranberry harvest that can be sampled in a variety of dishes and cocktails at the hotel.

Guests can take a page from history at Fairmont Hotel Vancouver, one of Canadian Pacific's original rail hotels with the Tea to Train Tracks package. The tradition of Afternoon Tea pays homage to Canada's 150th birthday with a coast-to-coast gourmet experience, while an excursion on Rocky Mountaineer pairs a feast of Canadian cuisine with breathtaking scenery, weaving through the spiral tunnel and past the last spike which connected the railway east to west in 1885.

For the best local culinary finds, ask an expert and go on the Chef Market Trek to Granville Island and shop with a top toque from Fairmont Hotel Vancouver, followed by a private tour and tasting at Granville Island Microbrewery. The day wraps up with a four-course dinner paired with wine and features the day's purchases, along with overnight accommodation.

Also in Vancouver, Fairmont Waterfront presents the Bee Green package - a buzz-worthy adventure with a private tour of the hotel's rooftop honeybee apiary with the Bee Butler or a Bee buddy, jar of honey, a mason bee house to take home, a $10 donation to Hives for Humanity to support the Pollinator Corridor, and accommodation in a terrace room that opens onto the organic gardens. At Fairmont Pacific Rim, the Forage to Fork package takes guests on a private outdoor excursion with a chef to pick edible wilds. The learning continues with a hands-on class in the Botanist cocktail lab followed by dinner for two featuring the harvested edibles picked earlier, and overnight accommodation. Botanist opened in April and is heralded for the way it celebrates harmony in nature and the abundance of local ingredients sourced from the natural landscape.

Getting from the mainland to Victoria is a breeze with a scenic 20-minute harbour to harbour flight on Helijet. The Fairmont Empress has just completed a $60 million restoration with new guestrooms, lobby, restaurants and Fairmont Gold. Their Garden to Glass package provides accommodation and a luxurious half day of cider and spirit tastings with limousine transportation. The first stop at Sea Cider's heritage apple farm includes sips and small bites, and then a visit to the waterfront Victoria Distillers in the quaint village of Sidney-by-the Sea for a spirits tasting.

It's Alpine to Après at Fairmont Chateau Whistler with a trip along the scenic Sea-to-Sky highway to bring out the wild side with a backdrop of mountains. The world class adventure starts with a backcountry all-terrain vehicle to explore groves of ancient trees, hidden lakes, and four of the most spectacular ziplines in the world. In town, guests will discover legends, arts and ceremonies at the Squamish Lil'wat Cultural Centre with a First Nations Ambassador. The action continues at the hotel with a signature Canada 150 Cocktail served in a keepsake crystal coupe glass and overnight stay.
